1 cup heavy cream
2 tsp instant espresso powder
½ tsp vanilla extract
½ cup powdered sugar
2 tbsp grated semi-sweet chocolate
In a large mixing bowl, stir mascarpone
with a rubber spatula until smooth; set aside.
In a separate mixing bowl
combine cream and espresso; stir until dissolved. Stir in vanilla and powdered sugar. Using an electric mixer, whisk the cream
mixture on high until soft peaks form.
Fold whipped cream mixture
into mascarpone, one-third at a time, blending well between each addition. Transfer dip to a serving bowl, and sprinkle
with grated chocolate.
