Corn Dip Recipe from Emily :)

Prep time: 5 minutes

Ingredients:
½ c. sour cream
½ c. mayonnaise
1 can of Green Giant “Mexi Corn” (drained)
1 c. cheddar cheese (shredded)
½ bunch of green onion (chopped fine)
2 garlic cloves (minced)
Salt + Pepper- to taste
Cayenne pepper- to taste

Directions: Mix in a bowl. :)

Apple/Walnut Baked Brie Recipe

 Ingredients
·         1/2 cup apple, chopped
·         1/4 cup walnuts, chopped
·         1/4 cup dried cranberries
·         2 Tablespoon brown sugar, packed
·         1/2 teaspoon cinnamon
·         2 Tablespoon butter or margarine, melted
·         1 round (8 ounces) Brie cheese
Preheat oven to 350F.

Coarsely chop apple and combine with walnuts, cranberries, brown sugar and cinnamon in small bowl and mix gently. Stir in butter just until ingredients are moistened.

Spoon apple mixture over top. Bake 12-15 minutes, or until cheese is soft and just begins to melt.

Robin hosted our Valentines Day or Pink Challenge evening - which is especially fitting seeing that she is about to be expecting her own little pink bundle of joy.  It had been a while since we had a card with the bird on the branch, but I was overjoyed to see that Emily was bringing back the tradition full force.  Gretchen's "Adore" card was daunting, because I am so horid at coloring, but it turned out to be one of my favorites from the evening.  There was pink everywhere and one could definatly tell that love was in the air.

In the interest of my own sanity, I decided to one "entry" for all of the cards. The Christmas gathering is always one of the most fun!!! Who can resist all of the tempting appetizers and treats? Everyone's favorite seemed to be the Kahlua fruit dip (Melanie maybe you could post the recipe?), but I sampled everything and there was nothing that disappointed. Even better than the food was the wonderful creativity of the cards and crafts this time. Some personal favorites were Jennifer's with her creative recycling effort of a pop can popper thingy, Gretchen's "May Your Holidays Sparkle" cards that many commented looked professional, Melanie's use of rhinestones (I love them but just can't ever seem to integrate them into my projects), the only non-holiday card created by Stephanie, and Teri's simple, but adroable paper ornaments. I can't wait for next month and see what everyone comes up with.
